it means unlocking the phone, Apple determines what can be installed and how the iPhone GUI looks and feels. i dunno if it's ok to talk about jailbreaking on this forum.

if you mean you want to use it as an iPod Touch...just plug it in and set it up. An iPhone without service essentially becomes an iPod - I have 2 iPhone 3Gs without service for that very reason.

No jailbreaking required.

That's what I'm trying to do is set it up as an Ipod for my son. But when I plug it in it shows the Ipod but also a picture showing it's not plugged in. I know it is plugged in so what can this mean?

You need to see if the iPhone already has an iTunes account linked to it. If so, it will be slightly more difficult to get it working with iTunes.

Though, I'm pretty sure that you can just install iTunes, plug in your iPhone, then when it prompts that you're using it on a new computer, just allow it to reformat the entire iPhone. Unless of course you want to keep your songs and videos or something.

iTunes should automatically update its firmware to the latest one.

And yes, if you're looking to jailbreak and/or unlock the iPhone, you shouldn't use iTunes at this point, since Apple would try to prevent it from doing so.
