How hot would you say this is? I don't mind hot stuff but the wife really can't handle it. If I know it is hot I can take out some of the hotter stuff. I can't image it is all that hot since there is so much dairy in it but one never knows.

I don't think it's that hot as written. I spiced it up by adding the Tabasco & adding more spices (including putting the Cajun seasoning on top).

I would say take out the Cayenne to make sure. That's the stuff that will give her the "back in the throat" burn.

LOL!! Well... It made 2+ meals for 2 of us... I would say it would feed 4 - 6 people depending on what side dishes you serve.

And make sure one of them is fresh baked bread of some kind (those Pillsbury Butter crescent rolls rock!)
