I am impressed with your choices!!!
Only a few comments:
First of all make sure to buy ONLY samsung TCCD chipped ram. Many manufacturers use these chips, but make sure you get something with TCCD chips.
Second: upgrade your power supply, these boards DEMAND the best highest power PSU you can(t) afford. Use an Enermax 600 watt rev 2.0., PCP&C, or the best OCZ supply available. (You will thank me in stability for this one.)
I wrote the review here at BB on the DFI Ultra-D. I have also had the pleasure of working with the SLI-DR.
Currently I am running the Ultra-D, a 3000+ Winchester, a gig of either Ultra 31720 TCCD ram, or Corsair TCCD, or sometimes a gig of G.Skill TCCD.
With that, a Sapphire X850XT card.
You are correct to wait for the Venice chips, they will have much better memory controllers onboard than any winchester ever had.
My 3000+ chip dies at ~2250 Mhz, but I have had this board stable at some huge overclocks with a week 0448 winchester. Clocks like 315x8 for 2520 MHz!!!
WIth a Venice chip and a gig of G.Skill LE TCCD ram, you will be able to go to some huge overclocks!!!
