Another alternative if you want to see all the insides, but don't want the whole setup open air is to put everything in an acryllic case. Looks like this for the most part:

@blake -- how much is that case? You think another case used in this demo is cheaper? In some weird way, I'm drawn to this case, especially since I don't have a cat

I built something out of an old TV cart, and run my test bed on it. I spent $10 on a wall mount for that 20" LCD, and I plan to get a $10 slide out keyboard/mouse tray to mount under the TV cart's top shelf.
Not great, but very convenient for testing hardware. I don't sit at this system, so the low height isn't a problem... It is right next to my desk so I can work while keeping an eye on benches.
Plan to move the PSU under the top shelf when I switch to the PCP&C Silencer I have that has much longer cables.
