Does having the 2 memory chips in an Intel i5 laptop still provide better performance than having just one?

I thought that went away in the last generation chipset, and when that question was asked to Intel at CES, they confirmed it. However I'm still being told that two chips still provides optimal performance.

What is the difference in performance between 1 chip and 2 chips?

I haven't looked into any of this - but isn't there dual channel on them? Seems like a good reason for two.

Yea, they do have Dual Channel (and some with triple channel), however I thought while it was better to run two, the performance hit for using just one wasn't as big as it used to be.

I'll have to do some testing when I get the new laptops for work LOL
